Ingredients

  • 1 liter of water
  • Cinnamon sticks (optional)
  • 100 grams of pearl barley (1/2 cup)

Preparation

  • Wash the pearl barley well using a sieve, passing it under running tap water.
  • Let the oats sit in enough water for 12 hours.
  • Boil the barley in a liter of water. Cook over low heat for 45 minutes.
  • Add the cinnamon. Stir constantly.
  • Remove from the heat.
  • Remove the cinnamon sticks, then let cool.

2. Barley milk with salt

Ingredients

  • 1 cup of barley (200 g)
  • 2 cups (400 ml) water
  • 1 pinch of sea salt

Preparation

  • Wash the barley well.
  • Boil for 6 minutes in 2 cups of water over high heat.
  • Reduce the heat to minimum, then cook for 20 minutes.
  • Add the salt.
  • Remove from the heat and mash.

3. Sweet barley milk

  • 100 grams of barley (1/2 cup)
  • Honey (according to taste)
  • 1 cinnamon stick
  • Zest of half a lemon
  • 1 liter of water

Preparation

  • Wash the barley thoroughly.
  • Boil in a liter of water until it is well softened.
  • Add the cinnamon and lemon zest.
  • Add honey to taste.
  • Let cool, then serve.

4. Barley milk in a blender

Ingredients

  • 1 pinch of salt
  • 1 cup of barley (200 g)
  • 4 cups (800 mL) water
  • Natural or other sweeteners  (cinnamon, vanilla extract or honey)

Preparation

  • First soak the barley in a container of water for 12 hours to soften it.
  • Rinse well and drain to remove impurities.
  • Then mix the barley with 2 cups of water, gradually increasing the speed.
  • Filter to extract the milk.
  • Then add the chosen sweetener, to taste, and beat vigorously.
  • Add the pinch of salt.
  • Serve cold.

Store the rest in the refrigerator in a container with a tightly closed lid.

6. Barley pudding

Ingredients

  • 1 cup pearl barley (200 g)
  • 1/2 liter of milk (2 1/2 cups)
  • 1 can of condensed milk (200 ml)
  • 2 cinnamon sticks
  • 1 tablespoon of vanilla
  • 1 pinch of salt
  • Mint leaves

Preparation

  • First, soak the barley overnight. Rinse and drain.
  • Then boil the barley in four cups of water for 45 minutes. Add more water if needed.
  • When the barley has become soft, add the milk, condensed milk, cinnamon, vanilla and a pinch of salt. Then cook until it becomes thick.
  • Leave to cool and serve with cinnamon powder and fresh mint leaves.
