For the cake

  • 7 fresh eggs
  • 7 tablespoons of sugar
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking powder
  • 7 tablespoons of flour (sifted)

For sauce or frosting

  • 1 large can of cream
  • A large can of evaporated milk
  • 1 large can of condensed milk
  • Optional: 1 tablespoon unflavored gelatin

Keep in mind that adding meringue definitely makes the dessert look a lot more aesthetic, but it also increases the caloric value.

How to prepare our Genoese cake

  1. Preheat the oven to 180 ° C.
  2. Separate whites from yellows. Keep the yolk in each shell for later use.
  3. Beat the egg whites until stiff with a mixer. If you prefer, use a spatula to whip the whites instead of the mixer. In most cases, the mixer will lose porosity in the mixture, but the difference is not very significant. If you want, you can try both methods and tell us if you feel any difference.
  4. While stirring, add the first yolk then a spoonful of sugar and continue beating until completely dissolved.
  5. Add another yolk, sugar and so on until you have beaten all the yolks and sugar.
  6. Add the 7 tablespoons of flour, one at a time.
  7. Make sure the spoonful of flour you add is well dissolved before adding the next one.
  8. Use a spatula to loosen the mixture from the edges and, at the same time, make smooth, enveloping movements to prevent the eggs from losing bulk.
  9. Grease and sprinkle a circular mold with flour. If possible, use a removable mold.
  10. Pour the mixture into the mold and put it in the oven for 25 to 30 minutes.
  11. Then put a knife in the cake and check that it comes out clean.

  1. In a mixing glass, pour the condensed milk, the evaporated milk and the cream of milk.
  2. Mix until a homogeneous mixture is obtained.
  3. When you take the cake out of the oven, while it is still hot, pour in about three quarters of soaking (save the other quarter to pour over the pieces when ready to serve).
  4. We recommend that you poke the cake in about four spots on the surface so that it absorbs the frosting well.
  5. Let cool and place in the refrigerator for 2 hours before serving. Unless you’ve decided to add the meringue.
  6. If you left the last quarter of the sauce for later, instead of pouring over each piece, you can also add a spoonful of unflavored gelatin and add it to the whole cake before cooling it.
