Crab or surimi?

The surimi that can be found in the vast majority of supermarkets is an imitation, in the form of sticks, pinkish-orange on the outside. There are now excellent brands very close to the taste of crab. The difference lies, among other aspects, in its price.

Real crab meat is very expensive. Surimi is therefore the most affordable option with a few sweeter notes, perfect for obtaining really tasty croquettes.

For this croquettes recipe, surimi, combined with crab or another fish, can make a delicious mix.

Crab Croquettes

Our delicious crab cakes recipe

This recipe consists of three parts: the preparation of the crab croquettes as well as the preparation of two sauces to accompany them. It is a preparation designed for about 10 guests. As for the sauces, these can be replaced by others, depending on the tastes and preferences of your guests.

Ingredients

  • 3 eggs (180 g)
  • 1 cup of crumbled bread (200 g)
  • Chives (60 g)
  • 1 bag of crab meat or surimi  (500 g)
  • Sunflower oil for frying
  • 3 tablespoons of wheat flour (50 g)
  • 1 lime, grated (5 g)
  • 1 small red pepper, finely chopped (15 g)
  • 1/2 teaspoon of grated fresh ginger (5 g)
  • 1/4 cup chopped fresh parsley (50 g)
  • 1 tablespoon of low sodium soy sauce (10 g)

Preparation

  1. Finely chop the parsley, green onions and crab or surimi.
  2. Beat the eggs until a homogeneous mixture is obtained.
  3. Gather the breadcrumbs, eggs, chives and parsley.
  4. In another bowl, combine the soy sauce, ginger, lemon zest, chili and add everything to the mixture.
  5. Add the crab or surimi to the preparation.
  6. Knead and shape with your hands discs about 3 centimeters in diameter or the classic shape of the croquette. Sprinkle with wheat flour.
  7. Heat the oil in a pan, brown the croquettes over medium heat. Remove them once they are golden brown and place them on absorbent paper.

Coriander sauce recipe

Ingredients

  • Cold water (10-15 ml)
  • 1 tablespoon of lemon juice (10 ml)
  • 1 tablespoon and a half of olive oil (15 g)
  • 3 tablespoons of chopped fresh cilantro (30 g)
  • 1 tablespoon of low sodium soy sauce (10 g)
  • 3 tablespoons of mild chilli sauce (30 g)

Preparation

  1. Combine all the ingredients and set aside for about 10 minutes.
  2. Serve separately.

Tartar sauce recipe

The classic tartar sauce is an excellent accompaniment to these crab cakes; it is one of the most traditional sauces in the kitchen, well known for its intense flavor, which can be kept for up to 5 days in the refrigerator.

Ingredients

  • 1 medium egg (60 g)
  • ¼ teaspoon of salt (2 g)
  • 1 small sweet onion (20 g)
  • 4 pickled capers (10 g)
  • ½ tablespoon of mustard (5 g)
  • 1 C. 1/2 teaspoon dried dill (5 g)
  • 1 tablespoon of lemon juice (10 g)
  •  6 medium pickled pickles (40 g)
  • 1 tablespoon of apple cider vinegar (10 g)
  • 10 tablespoons of sunflower oil (100 ml)
  • 5 tablespoons of extra virgin olive oil (50 ml)
  • ½ tablespoon of dried onion powder (5 g)

Preparation

  1. Finely chop the sweet onion and pickles. Mash the capers a little, then set aside.
  2. Prepare the homemade mayonnaise in the blender as follows: first add the egg and olive oil and start beating. When the mixture begins to emulsify, increase the speed of the mixer. This is when sunflower oil should be added in the form of a fine thread while continuing to beat. Continue until you reach the desired thickness.
  3. Add the mayonnaise, sugar, lemon juice, onion, mustard and salt. Mix again until you obtain a homogeneous preparation.
  4. Add the onion, chopped pickles, capers and dill.
  5. Store in the refrigerator for a few minutes before serving.

There are many other sauces that can accompany crab cakes. Most recipes contain mayonnaise as an ingredient, but this is not mandatory and other options are possible.
