Serrano ham  is the protagonist of this delicious mountain soup. According to Wikipedia, this food is a type of cured ham that is obtained by salting and air drying the hind legs of the pig.

Ingredients

  • 3 eggs
  • 1 large onion (50 g)
  • 7 cloves of garlic (25 g)
  • 2 sprigs of fresh parsley
  • Extra virgin olive oil
  • 3 tablespoons of salt (75 g)
  • 5 medium tomatoes (750 g)
  • 1 cup whole almonds (100 g)
  • 2 large slices of ham (200 g)
  • 4 slices of wheat bread (300 g)

Preparation

  • First of all, be sure to wash all the vegetables well.
  • Then, over low heat, place a saucepan with water. Let warm up, little by little, for 20 minutes.
  • Once the water is almost boiling, add the eggs. It is advisable to leave them for 10 minutes. Once this process is complete, reserve the eggs in a separate dish and start removing the shell, then cut them into pieces.

  • As for the garlic cloves, you should peel them and crush them until they are all free from skin. In a saucepan with a drizzle of extra virgin olive oil, add the almonds with the previously crushed garlic.
  • Let both the garlic and the almonds sauté a bit, so the flavors blend perfectly. Remove the ingredients from the pan, you need to proceed and place the sauce on a separate plate.
  • Using a blender, you will mash the mixture until you notice that the result is a thick paste. You can add more or less water, depending on your preference.
  • Be sure to remove the stems from the tomatoes. Then continue to cut them all in the shape of a cross (that is, four cuts are made for each tomato). The cross section is made from top to bottom, then left to right, from your perspective.
  • In a small pot of boiling water, blanch the tomatoes for about 2 minutes. Then drain them, make sure to remove the skin well and cut them into cubes.

Do you remember the pan with which you sautéed the garlic and almonds? Do not wash it yet. In it, you will place the onion (previously cut into small cubes) and start to sauté them again. Remember that the ingredients take time to acquire the desired flavor.

  • When the onion is golden, add the tomatoes. Cook over low heat for 20 minutes.
  • Now take the Serrano ham , cut it into cubes, with extreme care. The idea is to get the most out of the amount of ham.
  • Add the sliced ​​ham to the mixture of garlic and marzipan. Mix the combination until a homogeneous mixture is obtained.
  • Then add 5 glasses of water, the hard-boiled egg and put everything in a saucepan with the mixture and cook for 15 minutes.
